- 5 firm jewel yams
- 1 cup water
- 2 ounces (1 /4 stick)
- butter
- Freshly ground
- nutmeg
- Salt to taste
1. Place trivet in bottom of a 4-quart or larger
pressure cooker. Add yams and water.
2. Close lid and bring pressure to second red
ring over high heat. Adjust heat to stabilize
pressure at second red ring. Cook for 15
minutes.
3. Remove from heat and use Natural Release
Method, see page 10.
4. Slip the yams out of their skins and mash with
butter, nutmeg and salt. Place in a decorative,
warmed serving dish.
Makes 6 to 8 servings

The beauty of this recipe is its simplicity.
When cooked in the pressure cooker the
yams slip out of their skins, eliminating the
